From August 8th to the 15th the family and I board the Carnival Luminosa for our 3rd cruise on the cruise line. This time it's off to Alaska! 7 days and 4 stops. A great way to end the summer and escape some of the Texas summer the heat! Stay tuned for a full summary feature on that adventure! My First Wine CompetitionA brand new first year wine event is taking place at the Fort Worth Stock Show and Rodeo this fall. The Vine 2 Wine International Wine Competition will be taking place October 19-21 and I will be partaking as a judge all 3 days. I have never judged a formal competition of this size before but welcome the chance to do so! Spending 9 months in 2022 to prepare for my CSW exam better pay off for something other than just being able to talk about wine right!? Local Food FindsThe latest major food finds I came across in town recently was this absolutely amazing sourdough bread loaf from Homegrown & Homemade LLC. Mekalya, the owner and home baker behind this goodness met me at The Zone Night Market a couple weeks ago and I had to try the goods I saw on display. I am glad I did as this version is some of the best, I have ever had period. The oats and honey addition take this favorite bread of mine to another level. Great for toasting with your favorite sandwich toppings! You can order yours each week right here if you want to sink your teeth into this as well. DIM (Do It Myself) EatsThe past 2 weeks kept me busy with some meaty DIM grubs to include what you see below; a grilled tomahawk steak and my first ever go at trying to make smoked baby back pork ribs in my new cabinet smoker. The steak turned out perfect! 30 minutes on medium on my Blackstone grill with 4 turns to make sure it was an even medium outside and inside. I used Uncle Bobs Coffee Rub on this and that is all it took for steaky perfection. The ribs went as follows, rubbed with yellow mustard as a binder, seasoned generously with hardcore carnivore red seasoning. Smoked at 250 for 2.5 hours, then wrapped in foil for 1.5 hours at 225. Let sit for 30 minutes and what you see below is what I had. I gave them a 7/10 for dry rub pork ribs. I will smoke them longer next time to get more smoke ring and more bark on them. Beyond that, I was actually very pleased with these for my first go round. Mind you I do not baste my pork ribs with sauces as I do not prefer "wet" style ribs heavy with sauce and sweetness. I did not use a meat thermometer either, but I will from now on to assure I hit my temps as many true pitmasters strongly suggest. Remember! Introduction It has been 2 weeks now since our return from our 10 day vacation of which 7 was spent onboard the Carnival Luminosa cruise ship. We spent time in Alaska primarily with a couple stops in Canada as well. Additionally, we spent 3 days total in Seattle prior to and after our cruise to savor a bit of the Emerald City while in the area.
